20 minute Shrimp Tacos


Ingredients:
2 pounds of medium-large shrimp (about 3 per taco, 15 tacos)
Flour tortillas
2 bags of Slaw (red cabbage, green cabbage, carrots)
3 heaping TBSP of mayo
2 TBSP cilantro, diced small
2 limes, zest and juice
2 chipotles in adobo, diced
chili powder
salt
pepper
4 green onions, diced
Canola oil
Homemade or store bought spicy guacamole
Mango Salsa - optional (whatever your favorite salsa, but the mango salsa was a great compliment to the spicy shrimp)

Directions:
1. Peel and dry the shrimp. Season generously with salt, pepper, and chili powder
2. Mix the mayo, lime zest, lime juice, cilantro, chipotles, salt and pepper. Add the slaw and toss. Reserve until ready to plate.
3. Chop your green onion for garnish
4. Heat a large cast iron skillet with a light coating of canola oil. Cook shrimp 3 minutes per side.
5. To plate, heat up flour tortillas, add slaw, then shrimp, then top green onion and optional salsa and/or guac.
