Big Mic Quesadillas (Cheeseburger Quesadillas)



















Ingredients:
1.5 pound of ground sirloin or 85/15 ground beef
8-10 flour tortillas
2 bags of shredded mild cheddar cheese
1 bag of shredded sharp cheddar cheese
1 TBSP Worcestershire sauce
1 tsp chili powder
Lawry's season salt - about 1 tsp
~1 tsp pepper
3-4 TBSP butter
cherry or heirloom tomatoes, chopped
iceberg lettuce, chopped
dill pickle chips (I had regular dill and the Trader Joes spicy dills that went great with this)

For the "Mic" Sauce:
1 TBSP yellow mustard
1/2 cup ketchup
1/2 cup mayonaise
cayenne pepper to taste

Directions:
1. Heat 1 TBSP of butter in a cast iron skillet. Add the beef along with Worcestershire, salt, pepper, and chili powder.  
2. Break up the meat and cook until brown. Taste for seasoning. 
3. Cover with a lid and drain the fat into a bowl. 
4. Prepare a large griddle by brushing it with the fat from the beef. Heat to medium high and get your ingredients ready to make the quesadillas to work fast. 
5. Butter the outside of your tortillas. you should have room to make 2 at a time so put 2 face down on the preheated griddle. 
6. Add a nice layer of mild cheddar, then a layer of beef, then a thin layer of sharp cheddar. Butter the outside of the tortillas going on top as well. Close them up and let brown for 3-4 minutes on one side. 
7. Peek to see if you have color on the bottom. Then carefully flip using a large spatula and your other hand or another spatula.  Cook another 3-4 minutes on the other side. 
8. Prep your Mic Sauce. If you haven't already, line one side of your plate with lettuce, add some tomatoes, pickles and a small dish for your sauce. 
9. When the quesadillas are done, let rest on a cutting board for 2 minutes before cutting into triangles. Serve with all accouterments. 
Enjoy! This should make 4 large quesadillas if using the burrito size tortillas. 

 

Note: You can make a salad out of these ingredients too - a Cheeseburger salad.  I swapped out the tortillas for some cheap burger buns that I broke up, tossed in olive oil, S&P and sesame seeds and baked in the oven for 10-12 minutes to make bun croutons.  Use more romaine lettuce and then just toss in the meat, pickle, shredded cheese and tomatoes. Toss in a bowl with dressing and top with burger croutons.  There you go!  It really is a cheeseburger salad!
