New Orleans Style Salmon - topped with shrimp


Ingredients for spice mixture:
1/2 tsp salt
1 tsp garlic powder
1 tsp sweet hungarian paprika
1/4 tsp pepper
1/2 tsp onion powder
1/2 tsp cayenne
1/2 tsp dried oregano
1/4 tsp red pepper flakes

Other Ingredients:
1.5 pounds of salmon
About 1/2 pound of large shrimp (3-4 per person)
8 TBSP butter, divided
2 TBSP honey

Directions:
1. Take the skin off the salmon. Rub generously with spice rub.
2. Heat 2 TBSP butter in cast iron to medium high heat.
3. Sear salmon 3 minutes each side and then remove to a plate. (I kept mine warm in the microwave)
4. In the same pan, add another TBSP of butter to the cast iron.  Toss your shrimp with the same seasoning. Cook 2 minutes each side and then remove onto the same plate at the salmon.
5. Turn your heat down on your pan a bit. Add the honey and remaining butter to the pan.  Stir and bring to a simmer.
6. Turn back up your heat to medium and add the salmon back in the pan for 1-2 minutes per side. Add the shrimp back at the last minute to warm through and toss with glaze. 
7. Serve the shrimp on top of the salmon and drizzle some glaze over both. Sprinkle with a tad bit more seasoning if you have some left. Garnish with parsley and serve.

I served this alongside rice pilaf or yellow rice and vegetables.  If you are doing rice, cook your rice all the way through and then as it is sitting, cook your seafood.

Enjoy with a Sauvignon Blanc.
