Candied Bacon Bites
Ingredients:
1 pound of slab bacon
1/4 cup maple syrup
1/4 tsp cayenne
1/2 tsp pepper
Directions:
Cut the slab bacon into 1 inch cubes
2. Heat a cast iron skillet to medium low and add the bacon.
3. Render for about 20 minutes, turning occasionally. Each time you turn be mindful to change the side that hits the pan so that by the time the 20 minutes hits, each side is nice and brown.
4. Drain most of the fat with a spoon, lower heat.
5. Mix syrup, cayenne, and pepper and then pour over the bacon. Toss to coat and simmer very low for about 10-15 minutes, turning every 2-3 minutes.
6. Serve and enjoy!
