Mexican Pizza



Ingredients:
3 Large flour burrito shells
1/2 pound ground sirloin
1 avocado, when ready slice and squeeze lime on top
1 cup of sour cream
2 limes
canola oil
jarred pickled jalepenos
Chihuahua or Oaxaca Cheese
Shredded Monteray Jack Cheese
1 can of refried beans (I used the chorizo refried beans this time)
Hot Sauce (Tabasco)
Taco Seasoning packet (use 1/2 the packet)


Directions:
1. Prepare all of your ingredients. Mix sour cream with juice of 1 lime and 2-3 dashes of hot sauce. Drain your jalepenos. Slice the cheese thin.
2. Put 2 pizza stones in the oven. Preheat oven to 350.
3. Brown your meat in a cast iron with a little canola oil and taco seasoning. Using a slotted spoon, remove from pan into a bowl and reserve.
4. Wipe out the pan. Put more canola in the pan just enough to fill the bottom - about 1/2 inch.
5. Heat oil to medium high.  Carefully add the tortilla shell.  Using tongs, flip every 30 seconds to a minutes. Its okay to flip several times but you don't want a completely brown tortilla but you do want it crispy. 
6. After frying the tortilla drain on a basking rack set over a sheet tray. Make sure not to stack them, give them air so they don't get soggy.
7. Remove 1 pizza stone from the oven. Carefully place a shell on the pizza stone. Spread a thin layer of beans on the shell. Then add the oaxaca or chihuahua cheese. Then top with meat and jalepenos, light sprinkle of monterrey jack cheese to cover the spaces.
8. Put the stone with the mexican pizza back in the oven. cook for about 6-8 minutes or until cheese is bubbly. Repeat with other 2 pizzas. 
9. Top with crema (sour cream, lime, hot sauce mixture) and sliced avocado. Slice into 4 and serve.
