Grilled Shrimp Salad with Honey Mustard Dressing


Salad accouterments ingredients:
2 orange peppers, sliced
2 ears of corn
1 hot house cucumber, diced
20 sweet tomatoes, halved
1 large avocado, sliced
1.5 pounds of raw, tail off shrimp
3 hearts of romaine, chopped

Dressing ingredients:
1 cup olive oil
6 TBSP honey
3 TBSP dijon mustard
2 TBSP spicy mustard
5 TBSP white vinegar
1 TBSP sour cream
salt and pepper
Mix in a mason jar - should fit perfectly

Shrimp seasoning:
lemon zest
2 TBSP fresh chopped parsley
2 tsp minced garlic
2 TBSP olive oil
sprinkling of paprika
salt and pepper

Directions:
1. Season corn and peppers with olive oil, salt and pepper.  Using a grill pan, grill both the peppers and the corn for about 12 minutes or until char marks appear throughout.  Reserve. Once cooled, cut corn off the cob.
2. Dice up all your other ingredients and set aside
3. Season shrimp and toss on the same grill pan you used for your corn and peppers.  Grill shrimp for about 3-4 minutes per side.  Reserve.
4. Assemble salad by setting romaine at the bottom, then top with peppers, avocado, tomato, cucumber, corn, and shrimp.  Drizzle with dressing and sprinkle with a little pepper.  Enjoy.
