Grilled Peach Spinach Salad with Savory Shrimp Skewer
Ingredients:
10 large shrimp (5 to a skewer)
4 medium size peaches, sliced
Mixed greens (spinach, chard, kale, romaine)
Italian block cheese
Blueberries
Grape tomatoes
slivered almonds or candied pecans
Optional: 1 avocado, sliced and thinly sliced red onion
Dressing:
3 TBSP balsamic
3 TBSP olive oil
1 garlic clove, minced
1 tsp dijon mustard
1 tsp sugar
salt and pepper
Directions:
Mix the dressing and set aside. Slice the peaches and brush with olive oil. I used a grill tray/basket for these. Skewer the shrimp, brush with a little dressing and sprinkle with salt and pepper.
Grill the peaches for about 10 minutes, turning occasionally. Grill the shrimp for 5 minutes over high heat.
