Holiday Triple Chocolate Chip Cookies



Ingredients:
2 stick of unsalted butter - room temperature
2 eggs
2 tsp vanilla extract
3/4 cup sugar
3/4 cup dark brown sugar
1 TBSP baking soda
1/4 tsp salt
1/4 tsp chili powder
1/2 tsp cinnamon
3/4 pod of fresh ground nutmeg
2/3 cup of mixed nuts, chopped (hazelnut, almond, pecan)
1/3 cup dark chocolate morsels
1/3 cup semi sweet chocolate morsels
1/2 cup white chocolate morsels

Directions:
1. Cream butter and sugar until light and fluffy - about 1 minute.
2. Add in the eggs and vanilla and keep mixing,
3. Add in the flour, seasoning, baking soda, salt. Mix just until combined,
4. Add in the nuts and chocolate and semi sweet chocolate
5. Stop the mixer. Lay out plastic wrap or foil. Remove the cookie dough from the mixer. Wrap and refrigerate for at least 1 hour
6. Preheat oven to 350 degrees.
7. Line 2 cookie sheets with parchment paper
8. Use an ice cream scooper to portion out the cookie dough. Press the dough in the scooper and round it like a scoop of ice cream You should be able to fit 8 cookies per tray and may have just a small amount of dough left.
9. Place both sheets in the oven for 10 minutes. At the 10 minute mark, change which rack the cookies are on and rotate the cookie sheets. Cook another 7 minutes or until slightly brown around the edges of the cookie and they look set.
10. Cool on the cookie sheet for 10 minutes. Transfer to cooling rack. Let cool for 30 minutes,
11. Melt white chocolate in the microwave. Every 20 seconds, stop it and stir. It should take about 80 seconds. Use a fork to drizzle the chocolate over the cookies.
12. Let cool completely and then store in airtight container or plastic wrap for up to 5 days.
