Mexican Street Corn Waffle Fries
Ingredients:
1 box of frozen corn
1 lime
1 bag of waffle fries, frozen
3 TBSP mayo
2 TBSP siracha
2 TBSP chipotles in adobo
1/4 cup cilantro, chopped
1/4 cup cortija cheese
Season salt
Chili powder
1 TBSP butter
Optional: 1 jalepeno sliced thin for garnish
Directions:
1. Preheat oven 425.
2. Spray cookie sheet and place waffle fries in single layer. Cook about 30-40 minutes, flipping once. Ovens vary but you want them to be extra crispy so the corn and mayo doesnt make them soggy.
3. When you take the out of the oven, sprinkle with chili powder and season salt.
4. In the meantime, chop the cilantro.
5. Mix the mayo, siracha and chipotle in adobo together with a spritz of lime juice.
6. Heat the corn in a large pan with 1 pad of butter. Cook on high without moving for 2-3 minutes, Toss and cook again for 2-3 minutes. Sprinkle with chili powder and season salt and squeeze of half of a lime Toss again and turn off heat.
7. To assemble, place fries on a large plate. Top with mayo mixture, then corn, then cheese, then cilantro. Garnish with fresh jalepenos, if desired.
