Apple Jalepeno BBQ Pulled pork - and sauce



Pulled pork loin
4 pounds pork loin cut into 6 pieces
Rub with BBQ rub generously on all sides
1 tbsp liquid smoke
2 tbsp ACV
2 tbsp oil
Marinate overnight

To crockpot
Add 3 cups apple sauce with cinnamon (the little cups that come in a sick pack)
2 cups chicken stock
2 hot red peppers (or jalapeños), slit open
1 tbsp ancho powder
1 tbsp salt
1 tbsp pepper
1 tbsp liquid smoke
Pork
Other ingredients: 
You will also need potato rolls or slider buns, butter, jalapeños or pickled jalapeños from the jar. If you use fresh, slice them thin. 
Slaw - recipe below

Cover and cook on high 8 hours
While cooking, make your BBQ sauce. 

At 8 hours pull pork into a large bowl with tongs. Turn crock pot to low. 
Ladle out the liquid into mason jars. Keep about 2 ladles worth at the bottom of crock pot. Keep the mason jars with your liquid for another recipe - it's like a pork stock!  
Pull pork with 2 forks and then put back in crock pot. Add about half the BBQ sauce and toss. You should have about 2 cups extra sauce to reserve for those who like it saucy or for another recipe. 
Cover crock pot until ready to serve the sandwiches. 

BBQ sauce
2 cups apple sauce w cinnamon (the little cups that come in a six pack)
1/2 cup ketchup 
2 tbsp molasses
1 tbsp liquid smoke
2 tbsp Worcestershire
1/4 cup balsamic
1 (290z) can tomato sauce
1 tsp season salt
1 tsp pepper
1 tbsp chipotle chili powder
1 whole jalapeño with slits
2/3 cup brown sugar
Combine all ingredients and simmer over medium heat for an hour, stir often. Remove jalepeno, taste for seasoning. Reserve until ready. 

Ingredients for slaw:
1/2 head of green cabbage, sliced thin
1/2 red onion, sliced thin
3 TBSP buttermilk
3 TBSP mayonnaise
3 TBSP sour cream
1/2 tsp dill
1/4 tsp garlic powder
1/4 tsp paprika
1/2 tsp pepper
1/2 tsp salt
pinch of cayenne
1 TBSP siracha
2 green onions, diced

Butter both sides of buns and place butter side up on a sheet tray. Put under broiler for 5 minutes to toast. You want to see color here and have them really toasty because you don't want the bun to be too soft when you put the pork on or it will fall apart. 
To build sandwich, add pork, slaw, jalapeños and bun top. 

Enjoy - we are using the leftover meat again for some pulled pork nachos the next day!.
