Fried Chicken Bites



Ingredients:
2.25 pounds of boneless skinless chicken thighs
1 cup flour
1/2 cup cornstarch
32 oz canola or safflower oil
1 cup buttermilk
10-15 dashes hot sauce
garlic powder
onion powder
cayenne
salt
pepper

Directions:
1. Cut chicken into large bite size pieces.
2. Combine chicken, buttermilk and hot sauce , salt, pepper in a ziptop bag. Refrigerate for at least 2 hours.
3. Combine flour, cornstarch, salt, pepper and other seasonings. Use tongs to pull chicken out of the bag and toss in flour. Toss them really good - you should absorb up all the flour mixture in the chicken.
4. Heat your oil to 375. Prepare a sheet pan with a rack next to the fryer so you can drain the pieces that come out. Work in batches so you don't overcrowd the fryer.
5.Fry chicken about 7 minutes or until golden and crispy. Drain on rack. You can set your oven to 200 and keep warm in between batches.
Serve with hot sauce, bbq sauce or ranch. One of our new favs!
