Baked Shrimp Scampi
Ingredients:
2 pounds of raw jumbo shrimp, peeled, deveined
3 TBSP olive oil
2 TBSP white wine
salt and pepper
12 TBSP unsalted butter
4 tsp minced garlic
1 tsp garlic powder
1/4 tsp dried rosemary
1/4 tsp red pepper flakes
1 shallot, minced
3 TBSP minced parsley
1 lemon, zested and juiced
1 large egg yolk
1 cup panko
Directions:
1. Preheat oven to 425.
2. Place shrimp in a bowl. Add wine, olive oil, salt and pepper
3. To make your butter garlic mixture, combine room temp butter with garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, a little more salt and pepper and 2/3 cup of panko.
4. Arrange shrimp in an oval pan, fanning them out. Pour the extra marinade liquid over the shrimp.
5. Spread the butter mixture over the shrimp, spread it out to cover everything. Sprinkle with additional 1/3 cup of bread crumbs.
6. Bake for 15 minutes. If you want more browned top, but under high broiler for 2 minutes before removing from oven.
Optional - serve with bread or extra lemon wedges.
