Cauliflower and Chickpea Salad

Ingredients: 

Bacon

Cauliflower - I used orange this time

Chickpeas

Feta

Mixed greens

Cucumber

Avocado

Parsley

Chives

Dressing:

1/2 cup olive oil

Juice of 1 lemon

6 TBSP honey

4 TBSP dijon mustard

2 tsp creamy peanut butter

4 TBSP apple cider vinegar

salt and pepper

Toss cauliflower and chickpeas on a sheet tray in paprika, chili powder, salt, pepper, red pepper flakes and garlic.  Cook at 425 for 25 minutes.
