Mango Habanero Salsa

Ingredients: 

4 tomatoes

5 Habaneros

1 bag of frozen mango pieces

1 Jalepeno

1 red bell pepper

1 lime

1 white onion

5 cloves of garlic

1 carrot

1/2 cup cilantro

1tsp rice vinegar

salt

2 tbsp oil

Directions: 

1. Add 1 tbsp oil and mangos to a saucepan. Defrost and cook on low for just a few minutes. Let cool. 

2. Cut up all the other ingredients and put on a sheet tray. Toss in oil and salt and pepper. 

3. Roast at 400 degrees until you see some char on the vegetables and they are soft - about 35-45 minutes. 

4. Let cool.  Blend all ingredients together - the roasted vegetables, mango and oil, vinegar, lime juice and cilantro. Taste for seasoning and salt. 

Enjoy with some chips or as a salsa topping your favorite tacos.
