Jerk Salmon Salad


 Ingredients for salmon:

1.5 pounds of skinless salmon

Jerk seasoning mix

For glaze, mix together: 

1/4 cup ketchup

1/4 cup soy sauce

1 TBSP fresh squeezed orange juice

1 TBSP molasses

2 tsp curry powder

1/4 tsp cayenne

1/4 tsp allspice

1/4 tsp cinnamon

1 tsp fresh ginger (like from the jar or tube here is fine)

1 tsp minced garlic

1 TBSP olive oil

1 tbsp hot honey (regular honey is fine)

Ingredients for salad:

Diced pineapple

1 cup grape tomatoes, sliced

1 can black beans, rinsed and dried

1/4 cup cilantro

2 cloves of garlic, sliced

1 jalepeno, seeded and chopped

2 limes, juiced

1 tsp curry powder

1/4 tsp cayenne

Chopped green onion for garnish 

5 oz of mixed salad greens

Optional: crumbled goat cheese

Directions:

1. Mix all glaze ingredients and reserve

2. Dice and chop all salad ingredients  combine everything for salad except goat cheese and lettuce. Reserve until ready to serve. 

3. Season salmon on both sides with jerk seasoning. For 1.5 pounds make 4 slices of salmon. 

4. Heat 1 TBSP canola oil in pan over medium high heat. Sear salmon for 2 min, flip and glaze. Cook 2 min flip and glaze. 

5. Lower heat and glaze one more time about 1-2 minutes each side until desired doneness. Remove from the pan and let rest for a few minutes before placing on salad.

6. To serve, cover bottom of plate with lettuce. Then put the other “salad” mixture all around the lettuce. Place the salmon in the middle of the plate. Garnish with green onion and goat cheese, if desired.
