Deep Fried Jalepenos
Ingredients:
1 cup of flour
2 cups bread crumbs
1 cup panko
1 tsp pepper
1 tsp salt
1 tsp garlic powder
1 cup buttermilk
1 egg
1 quart of vegetable oil
Directions:
1. Slice all of the jalepenos. Carefully push out the rib and seeds with your fingers and put all rings in a bowl.
2. Heat oil in a dutch oven to 375.
3. While your oil is heating up, set up 3 dishes. 1 with flour, 1 with egg and buttermilk, the last one with bread crumbs and panko. Add salt, pepper and garlic to both the flour and the bread crumb mixture. Whisk the egg and buttermilk together.
4. Take 1/2 the jalepenos and place them in the flour. Toss to coat. Take half of those jalepenos and toss in buttermilk. Using a slotted spoon, toss them around and then drain them well before dropping in the breadcrumbs. Toss in the breadcrumbs with your hands and press down to help adhere the breadcrumbs.
5. Place breaded jalepenos in a single layer on a large plate. Repeat the process with the other jalepenos.
6. When oil is to temp, fry in batches. Out of all of your jalepenos, you should fry in 4 batches so you don't crowd your pot.
7. Fry for 3-4 minutes or until golden brown and delicious - tossing once. Drain on paper towel and serve right away.
1 TBSP ketchup
1 TBSP horseradish
1/2 cup mayo
salt and pepper
a tsp or so of pickle juice
