BLT Salmon Salad


Ingredients for dressing: 

1 (8oz) Plain Greek yogurt
3-4 TBSP Mayo
1/2 cup milk
2-3 TBSP Chives, chopped
Ranch seasoning
Dill
Salt
Pepper
Garlic powder
2 tsp minced garlic from tube
1-2 TBSP olive oil
Juice of 1/2 lemon
whisk and taste for seasoning

Ingredients for salad:

3/4 lb bacon (baked)
Avocado, seasoned with salt, diced
Croutons seasoned with salt, pepper, garlic, ranch (homemade croutons are leftover bread tossed with olive oil and seasoning and baked at 400 for about 10 minutes)
Grape tomatoes, halved
Red onion, sliced thin
2 (6oz) pieces of salmon, skin off
Seasoning for salmon -  Italian seasoning, salt, pepper, garlic, ranch

Directions:  

After you season the salmon, sear in a hot cast iron pan with canola oil for 4 minutes per side. Remove to cool off for a few minutes before topping the salad.  

To assemble the salad, portion ingredients in two separate bowls so you can toss two large salads. Mix everything in the bowl with dressing except salmon. Toss.
Serve on a large plate topped with salmon
