Cous Cous Arugula Salad

This salad happened when I had a mash up of ingredients left that I needed to utilize before they expired. I made my Greek Shrimp Skewers and instead of a simple arugula salad I added cous cous. 

Ingredients:

1.5 cups seafood stock (or chicken stock and if you don't have stock, water is fine too)
1 cup pearl cous cous
Italian seasoning
salt and pepper
1 tsp minced garlic (like from the tube)
2 TBSP olive oil
1/2 of a large cucumber, peeled, seeded and chopped
1/2 of a container of arugula (usually sold in a 5oz container)
1/2 cup of crumbled feta

Dressing:

1/4 cup lemon juice (probably 1 juicy lemon)
1/2 cup olive oil
1 TBSP dijon mustard
1 tsp oregano
1/2 tsp salt
1/2 tsp pepper
1 tsp minced garlic
1/4 tsp APGS (all purpose greek seasoning)
Optional: a few splashes of the pepperoncini juice from your pepper jar

Directions: 

Boil stock, seasoning, minced garlic and 2 TBSP olive oil. Stir in the cous cous and simmer for 8-10 minutes stirring often. Taste for seasoning and doneness. Turn off the heat and let cool.  

After about 10-15 minutes, stir. It should be cooled down a bit but still a little warm.  Add about 3-4 TBSP of dressing and stir.  

Let cous cous cool another 10-15 minutes. Toss with arugula, feta and cucumber.  Add a little more dressing to taste. Serve room temperature.
