Crawfish Cheesy Bread
Part 1:
1lb crawfish tails (you can buy frozen tails)
4 cloves garlic, minced
1/2 green pepper, diced
4 TBSP fire roasted diced tomatoes (1/2 a can)
1 tsp slap ya mama or other Cajun seasoning
1 tsp pepper
Sauté for 2-3 min or until some of the liquid evaporates
Once cooled, add and mix....
Part 2:
1 cup Monterrey jack cheese, shredded
1/2 cup Mayo
2 tbsp Green onion, chopped
2 tbsp Parsley, chopped
You can refrigerate this mixture until ready to use.
Slice French bread in half lengthwise - not a baguette it’s too hard.
Preheat oven to 350.
Scoop mixture on top of the bread. You should have enough for both sides of the bread - about 12-14 in bread. If needed, add a light sprinkling of Monterrey jack cheese. Bake on the top rack 10-12 minutes or until bubbly. Turn oven to broiler and broil for 2-3 min or until a little color forms. Cut into handheld pieces with a serrated knife.
