Pork, Apple, Pretzel Salad with Honey Mustard Dressing
Ingredients for dressing:
1/4 cup dijon mustard
1/4 cup honey
1/4 cup olive oil
Ingredients for salad:
~12 oz ham steak, diced
~12 oz bacon, chopped
1 (10oz box) of Super Greens mixed lettuce
1 cup of cheddar or cheddar jack cheese, chopped or shredded
2 TBSP bacon fat
2 TBSP melted butter
3 leftover pretzel buns, cut up into crouton size pieces
Directions:
1. Preheat the oven to 375.
2. Line a tray with parchment paper and lay bacon out. Line another tray with parchment paper and spread out pretzel pieces. Toss pretzel pieces in the 2 TBSP melted butter.
3. Cook pretzels about 10-12 minutes, tossing once. Cook bacon about 20 minutes or until desired doneness, chop
4. Mix ingredients for dressing
5. Use 1-2 TBSP of bacon fat and sear your ham steak pieces in a cast iron pan. Remove to cool.
6. Once everything is cooled, assemble the salad by tossing just the greens in a little bit of dressing. Place the greens on a plate and then top with other ingredients. Add more dressing over the top, if desired.
