Perfectly Fried Catfish

Ingredients: 

4 thin catfish fillets
1 cup milk
1 TBSP vinegar
hot sauce
1 package of Andy's Red fish breading
1 cup of vegetable oil

Directions: 

1. Marinate the catfish in a shallow baking dish with 1 cup of milk, 1 TBSP vinegar and a few dashes of hot sauce.  Marinate for at least 1 hour but up to 4 hours. 

2. Put the Andy's fish fry breading into another shallow dish.  Place the catfish in the breading mixture and gently pat to coat the catfish all around.  

3. Lay the catfish on a dry plate lined with paper towels. 

4. Heat a cast iron pan on the grill with about 1 inch of vegetable oil.  Close the grill lid and bring the heat up to about 400 degrees and let the oil get really hot - about 8-10 minutes. 

5. Fry 2 catfish fillets 2 at a time about 3 minutes per side. Drain on paper towels and serve immediately.  

Optional - (well not really) hot sauce of your choice!
