THE Cuban Sandwich

Ingredients: 

6 pack long sandwich rolls from bakery section of the store

yellow mustard

4-5 TBSP butter, softened

1 lb honey ham, sliced from the deli counter

12 Baby Swiss cheese slices

1 jar of bread and butter pickle slices

Pulled pork (about 3 cups) I used leftover pulled pork from a previous recipe. It was frozen and I rehydrated it for this recipe. If you are also doing this, you'll need about 1/2 cup bbq sauce and 1/2 cup chicken stock. Heat it on low in a pot and keep warm for serving. 

Directions: 

1. Prepare two grill pans on your stove. Heat up both of them to medium low heat. 

2. Butter the outside of your bread. Slather a thin layer of mustard on the inside of your bread. 

3. Begin layering the sandwich ingredients. First, 3 slices of honey ham folded, then 1/2 cup pulled pork spread out, then 2 slices of swiss cheese, then pickles. Close the sandwich. 

4. Place the sandwiches diagonal across one grill pan.  Carefully (with pot holders) flip the other grill pan on top of the sandwiches to create a press. Keep the bottom pan on med low heat for 2-3 minutes. Carefully lift the top pan, flip the sandwiches and put the top pan back on top. Turn up the heat to high and cook another 2 minutes. Both sides should be nice and crisp and the ingredients in the sandwich warm and the cheese melty. 

Serve right away!  This was my first attempt at a Cuban sandwich and it turned out great.  Just simple ingredients, executed. Give this a try. 

Beer is a great pairing for this sandwich.
