Shrimp Fajitas
Ingredients:
Fajita seasoning: 1/4 tsp each of sugar, cayenne, oregano, onion powder. 1/2 tsp each of salt, pepper, chili powder, hot paprika, cumin, garlic powder
2 lbs raw shrimp, peeled, deveined, shell off
Shredded mexican cheese
sour cream
1 red pepper, sliced
1 orange pepper, sliced
1 medium yellow onion, sliced
1/2 cup Spanish Rice (you can use leftover or buy one of those packets with the seasoning in it)
Lime
Canola oil
Cilantro
Flour tortillas
2 lbs raw shrimp, peeled, deveined, shell off

Flour tortillas
Your favorite hot salsa
Directions:
1. Marinate the shrimp with almost all of the seasoning and set aside. (Keep like 1/2 tsp of the seasoning).
2. Prepare a cast iron skillet to medium high heat. Add 1 TBSP canola oil. Saute the onions and peppers with salt, pepper and remainder of fajita seasoning. Cook them until you see some color and they just start to soften. Turn off heat.
3. If you're preparing Spanish rice, prep it now. Follow the package instructions.
4. Warm your tortillas by wrapping in foil and placing them over heat or by setting in a warm oven.
5. Prepare a griddle over high heat. Brush with canola oil. Sear shrimp on one side for 2 minutes. Flip. Add the peppers and onions on top of the shrimp as they continue to cook. Sprinkle with lime juice and top with cilantro.
6. Serve the fajitas on the hot griddle. Everyone can make their own. Toppings are endless but traditional would be cheese, lime, hot salsa, sour cream, rice.
