Cheeseburger Tacos
Whenever we go to a place that has cheesburger tacos, my husband always orders them. There are so many interpretations; some griddle them, some use ground beef, some use crispy shells. You can customize these however you like. Here's my first take on them.
Makes 6 regular size tacos.
Ingredients:
6 flour tortillas
1/2 cup spicy dill pickles, chopped
1/2 cup tomatoes,chopped
1 heaping cup of Applewod smoked cheddar cheese, shredded
2 cups shredded lettuce
1/2 cup ketchup
3 tsp mango jam
a few dashes of hot sauce
Salt, pepper, chili powder, garlic powder
a few dashes of Worcestershire
2 TBSP butter
Directions:
1. Chop all of your ingredients and shred your cheese. Prepare and set aside. Mix the ketchup, mango jam and Tabasco together. Taste for seasoning and set aside.
2. Add your meat to a bowl. Season with Worcestershire, salt, pepper, chili powder and garlic powder. mix.
3. Prepare two flat top griddles. Rub both with a little butter. Put one on medium-high to sear your burgers. Put the other on low.
4. Divide your meat into 6 equal portions and place on the tortillas. Place 2 at a time on the hot griddle, meat side down. Sear for 2 minutes, pressing down.
5. Turn over and place the tortilla side down on the griddle on low. Quickly add some cheese on top and let it melt, and continue cooking for 2 minutes.
6. To plate, remove the tacos onto a plate. Top with mango ketchup, pickles, tomato and lettuce. Serve right away.
7. Repeat with the other 4 tacos.
Burgers and tacos can be paired with so many beverages. An ice cold beer would be great here. But, today, I had a red wine from Argentina open, so I went with that.
