Asian Chicken Lettuce Wraps


Ingredients: 

1 onion, minced
5 cloves of garlic, minced
1 inch of grated, ginger
1.5lb ground chicken
salt and pepper
Green onion and sesame seed for garnish
Butter lettuce cups
2 TBSP cornstarch
2 TBSP canola oil or vegetable oil

Sauce:

6 Tbsp Honey
1/2 tsp Salt
4 Tbsp Soy Sauce
2 Tbsp Ketchup
2 tsp rice Vinegar
3 Tbsp Sriracha
4 Cloves Garlic, minced 
1/2 tsp Garlic Powder
2 TBSP Hoisin Sauce
2 TBSP Oyster Sauce
1/2 Cup Chicken /Vegetable Stock
2 tsp Sugar
Whisk and reserve

Directions: 

1. Take 1/2 cup of sauce and whisk in 2 TBSP cornstarch. Reserve

2. In a large sauté pan, cook onions, garlic, and ginger in 2 TBSP oil until soft. 

3. Add chicken with a little salt and pepper and break up until cooked through. 

4. Add most of the sauce and mix and cook for 1 minute. Add slurry and mix and cook for about 3-4 minutes turning often over medium low heat.  

5. If mixture seems dry, add more sauce to coat and cook more to caramelize and see sauce thicken. It should not be soupy, you want the sauce to coat the chicken and become one. Taste for seasoning.

6. Serve the meat in a bowl garnished with green onion and sesame seeds. Serve butter lettuce cups on the side.
