Carne Asada Fries

 Ingredients for fries

2 thin cut ribeye steaks - about 1lb total
1 bag of extra crispy frozen fries (Ore Ida)
2 TBSP beef tallow (or bacon fat or canola oil)
salt and pepper
1 TBSP canola oil

Steak marinade: 

2 tsp adobo sauce (from the chipotles in adobo can)
Juice of 1/2 a lime
salt
pepper
cumin
sweet smoked paprika
1 TBSP oil

Marinate just for 30-60 minutes on the counter

Cheese Sauce: 

1 jar of Cheese Wiz
4 oz of freshly shredded Monterey jack cheese
1 tsp chipotle powder
Combine in a small sauce pan over low heat. Whisk until combined, and the Monterey cheese is melted. Keep warm 

Garlic White Sauce:

4 TBSP sour cream
1/4 cup milk
Juice of 1/2 a lemon
3 tsp minced garlic
cumin
salt and pepper
sweet smoked paprika
A few dashes of hot sauce (I used green Yucateca hot sauce)

Whisk until smooth and taste for seasoning

Additional Toppings:

Green onion
Red onion
Tomatoes
Pickled jalepenos

Directions: 

1. Marinate your steak

2. Preheat your oven to 450. Spread the fries in a single layer on a parchment-lined sheet tray. Add the beef tallow in a few dabs around the pan (on top of the fries). Place in the oven. Pro tip: Place 2 cast iron pans on the top shelf of the oven to heat up. I used these pans to serve the fries so they stay hot while you're eating them. 

3. Combine ingredients for cheese sauce and heat over low heat. Keep warm

4. Combine ingredients for garlic white sauce and set aside

5. After the fries have cooked for about 10 minutes, toss them to make sure they all get coated with the fat. Continue to cook for about another 10-15 minutes or until crispy. 

5. Chop your garnishes and set aside

6. Heat a cast iron or grill pan to screaming hot with 1 TBSP canola oil. Sear the steaks for 2 minutes per side. Let rest for 5 before cutting against the grain. 

7. Remove the fries from the oven after about a total of 20-25 minutes or until desired crispiness. Toss immediately with salt and pepper. 

8. To plate, lay some fries at the bottom of the cast iron pans. (One cast iron was 10 in, for my husband. I had an 8 inch cast iron pan). Then top with steak. Then add hot cheese sauce, pickled jalepenos, green onion, red onion and tomatoes. Finish with a drizzle of the garlic white sauce.
