Martha's Pasta
Happy Earth Day Everyone!



Ok, I have to give Sean credit for this one.  Years ago he was watching some cooking channel, I was nowhere to be found and he must have been hungry. I come home and he says, "Hey I saw this recipe on TV today, you do .....and then you ......and you have to add this......"  So, this recipe was born and I have been cooking it ever since. I guess Martha Stewart was making something on TV and it somehow sparked this idea! :)


Ingredients:
1 pound penne pasta, prepared to package directions
1 (10oz) jar of sun dried tomatoes, diced
1/2 cup olive oil (more or less depending on how you like it) plus 1 TBSP to cook chicken
4 TBSP butter
1 1/4 TBSP red pepper flakes
1/2 bunch fresh parsley, chopped
1 package of fresh basil, chopped (if not in a package, at least 10 leaves)
1 1/4 TBSP Italian seasoning
4 cloves garlic, minced
salt and pepper to taste (you want 1 TBSP salt for the pasta water)
Reserve 1/2 cup pasta water to thin out olive oil/butter when mixing pasta
2 chicken breasts
1 tsp garlic powder
1/4 cup shredded parmesan
Grated parmesan for topping


Directions:
1. Dice chicken. Season with 1/4 TBSP of Italian seasoning and 1/4 TBSP red pepper, and 1 TSP garlic powder.
2. Cook chicken in 1 TBSP olive oil for about 8 minutes or just until cooked through. Remove from pan and reserve.
3. Cook pasta
4. While the pasta is cooking, add olive oil, butter, garlic, sun dried tomatoes, rest of the seasonings to the same sauté pan. Saute on low while the pasta is cooking.
5. Drain the pasta. Reserve some pasta water and add to sauté pan. Add the chicken back to the sauté pan. Toss and put heat up just to medium.
6. Add pasta to sauté pan along with basil, parsley, and 1/4 cup of shredded parmesan. Toss gently with 2 spoons over low heat.
7. Serve immediately and top with grated parmesan if desired. This recipe is really a repeat. I cook this at least once per month. You should have dinner on the table in less than 30 minutes.
