Sausage and Pepperoni Pizza

Ingredients:
4 small links of sweet Italian sausage
1/2 pound of pepperoni slices
12-16oz of shredded mozzarella cheese
1/2 Cup shredded parmesan cheese
1/2 Cup shredded asiago cheese
28 oz of tomato sauce
Cooking spray
Olive oil
1 TBSP Garlic paste
2 Pillsbury pizza crusts, refrigerated, original
Garlic powder, red pepper, Italian seasoning and salt and pepper - as much as you desire but should be a generous sprinkling.

Directions:
1. Preheat oven to 400 degrees.
2. Pull Italian sausage out of the skin and form into bite size pieces. Throw right into a medium sauté pan over medium heat. Saute until browned all around. Reserve.
3. Combine the TBSP of garlic to 2 TBSP of olive oil in a small dish. You will use this to brush your crust.
3. When oven is ready, spray your cookie sheets and spread out the dough to your desired thickness. Brush on the olive oil garlic mixture and sprinkle with Italian seasoning. Put in oven for about 8 minutes.
4. Take the pizza crusts out of the oven.  They should be 75% done. Now it is time for the rest of your ingredients.
5. Spread sauce over dough in a thin layer. Sprinkle with Italian seasoning, garlic powder, red pepper flakes, salt and pepper. Add Sausage and pepperoni in a thin layer almost edge to edge. Mix your 3 cheeses. Sprinkle cheese all over. If you want to brush the crust again with the olive oil garlic mixture you can now.
6. Put back into the oven for about 9-11 minutes or until cheese is bubbly and beginning to brown. \

Today's wine, I am still working on the Cabernet from yesterday. It was a good Italian-pairing wine.
