Spicy Tomato Soup and Grilled Cheese


For the grilled cheese:
All you need is some butter, American cheese, and butter top wheat bread. Spread a thin layer of butter on the outer side of the bread. Put 2 pieces of American Cheese in the middle and put on a flat top grill over medium heat. It should only take about 3-4 minutes per side.


For the soup:
3 TBSP butter
1 large onion, chopped
1 TBSP minced garlic
2 TBSP flour
2 (28oz) can crushed tomatoes or tomato sauce
2 TBSP tomato paste
3 TBSP sugar
3 1/2 cups of chicken stock
1 cup of half and half
1 TBSP ancho chili powder
2 TBSP smoked paprika
1 TSP cayenne pepper
salt and pepper to taste
Fresh basil for garnish


1. Heat butter in a large dutch oven. Add onions and garlic with a little salt and pepper. Saute for about 8-10 minutes stirring often.
2. Add flour and stir. Cook for 3-4 minutes.
3. Add tomatoes, stock, paste, sugar and spices. Stir and bring to a boil.
4. Turn down the heat, cover and let simmer for about 20-25 minutes.
5. Use immersion blender to make soup smooth. Add in the half and half slowly as you stir.
6. When ready to serve, sprinkle fresh basil on top.
