Steak "Marsala" with Roasted Vegetables

Steak with "Marsala" sauce
2 (16oz) new york strip steaks
8 oz of sliced mushrooms
3 tbsp butter
3 tbsp canola oil, plus more for drizzling on steak
1 cup of skim milk
1 Tbsp light mayo
1 Tbsp light sour cream
1 cup of light white wine (blend or unpacked chardonnay)
1Tbsp fresh thyme, chopped
1 tsp garlic powder
Salt and pepper

Directions:
1. Season steak with canola oil, steak seasoning and salt and pepper. Melt a little butter on an oven safe skillet. Sear steaks for 8 minutes each side and then 10 minutes in the oven for medium_well. (350 oven)
2. While the steak is cooking, start your sauce in a large pan with 3 tbsp of butter and 3 tbsp oil.
3. Once melted, add mushrooms and a little salt and pepper.  Toss and cook for about 7 minutes.
4. Add the wine, simmer for about 7 minutes
5. Mix the sour cream, mayo, and milk in a glass and whisk a little to make a smooth slurry.
6. Whisk the dairy mixture into the pan with the heat on medium low.
7. Add the thyme and garlic and taste for seasoning.
8. When the steak is ready, let rest for at least 5 minutes and then serve with the Marsala Sauce on top.

Roasted Vegetables
4 carrots, peeled and diced into 1 in pieces
6 small Yukon gold potatoes, diced into 1in pieces
Canola oil
Salt
Pepper
Joe's Stuff Seasoning
* toss seasoning and canola over vegetables on a sheet tray. Place in 350 degree oven for about 50 minutes. Toss half way through.
