Breakfast: Chicken Sausage and Eggs

Chicken Sausage and Eggs - Ranchero Style

Ingredients:
1 Chicken Asiago Sausage, cut into pieces)
2 eggs
1/4 cup skim milk
2 TBSP shredded monteray jack cheese
1 TBSP medium salsa
1 TBSP low fat sour cream
2 Tostada shells
salt and pepper

Directions:
1. Heat a medium saute pan over medium heat and add your sausage pieces. Brown them for a few minutes.
2. Mix your eggs with the milk and whisk. Add you eggs to the pan and lower heat.
3. Cook your eggs and sausage just until the eggs come together and begin to look like scrambled eggs.
4. Season with salt and pepper.
5. Plate the eggs and sprinkle with cheese.
6. Serve with the tostada shells, salsa and sour cream.
This was my version of huevos rancheros using the ingredients I had on hand.  This was a great treat for a Saturday morning!  Make your own creation today!
