Kale Chips, Salmon and Carrots

Kale Chips
1 bunch of kale
4 tbsp olive oil
salt and pepper
Cooking spray
Heat your oven to 400 degrees. Spray your sheet tray. Cut the stems off the kale and cut into chip-size pieces. Toss with olive oil, salt and pepper and then spread out to lay flat. Put in the oven for about 12 minutes. You can carefully turn them halfway through buy is not necessary. Let cool so they crisp even more. Carefully use a spatula to plate.

For the salmon I seasoned with olive oil, paprika, garlic, thyme, salt, and cayenne. Heat a pan to medium heat and cook salmon about 6 minutes each side - depending on how large. My pieces were about 4 oz each.

For the carrots I just used 1/2 bag of matchstick carrots seasoned with olive oil, salt, paprika, garlic. Saute in a pan over medium high heat for about 6 minutes.

I had some wine after dinner today so choose a hearty, comforting red on this 2 degree night.
