Buttery Baked Cod
3 thin fillets of cod
1/2 stick of butter
1 lemon, juice and zest
1 tsp paprika
1/2 cup flour
Salt and pepper
Directions:
1. Melt butter. Then add lemon juice, zest and paprika to the butter
2. Preheat oven to 350.
3. Season the flour mixture liberally with salt and pepper
4. Dredge fish in butter mixture and then flour. Lay flat in a 9x13 increased pan.
5. Let the fish sit for 5 minutes
6. Add the rest of the butter mixture over the top of the fish and bake for 20-25 minutes print the fish is flaky and golden brown
I served this on top white rice and kale chips on the side
Plain white rice
Kale chips: cut pieces of kale, sprayed generously with Trader Joe's olive oil spray. Season with salt, pepper, garlic powder. Bake at 400 degrees for about 10 minutes. Cool. I did the chips before the fish and then I turned the oven down to cook the fish.

This is a young wine that has a lot of brightness to it. It is going to compliment the butter in this dish but also bring out the freshness of the lemon.
