Birthday Cake Truffles


Ingredients:
1 cup of yellow cake mix
2 tsp shortening
2 TBSP of sprinkles, plus more for topping
7 TBSP butter
1/4 cup sugar
1/4 cup of flour
1 tsp vanilla
1 (16 oz) package of good quality white chocolate

Directions:
1. With a hand mixer, mix together all the ingredients except the white chocolate.  The "dough" should come together but not be wet or sticky.
2.  Roll the dough into small truffle-like balls and set on parchment paper
3. Put in the refrigerator for at least 30 minutes to set up.
4. In a bowl, melt your chocolate in 20 second increments, stirring in between.
5. Take your truffles out of the refrigerator and toss one at a time in the chocolate, using 2 forks. Place the truffle back on the parchment paper to set up.
6. Since the truffles are cold, the chocolate will harden quickly. Do not do more than 2-3 truffles without sprinkling the extra sprinkles on top - or they will not stick.
7. To set up all the way, return the truffles to the refrigerator. Keep stored in an airtight container in the refrigerator for up to 2 weeks.
