Steamed Clams
Ingredients
1 (15oz) can of crushed tomatoes with green Chile's
2 tbsp tomato paste
2 tbsp olive oil
4 cloves of garlic
2 cippolini onions
1 Tbsp parsley
1Tbsp basil
1 tsp red pepper
1 tsp pepper
1 tsp salt
1/4 cup clam juice
1/2 cup white wine (I used a Riesling today)
2 tbsp siracha
12 small clams, cleaned and dry
2 tbsp butter
12 pieces of baguette bread (something with a nice crust but soft in the middle
2 tbsp grated parmesan
Directions:
1. Blend garlic, tomato paste, olive oil, onion, seasoning in food processor
2. Add those ingredients to a large pot. Heat for about 3 minutes over low heat
3. Blend the tomatoes and then add to pot
4. Simmer on medium low for about 10 minutes
5. Add the clam juice and stir. Simmer for another 5 minutes
6. Add wine and butter and simmer for 2 minutes
7. Add clams in and toss. Cover and steam for 10 minutes or until all clams open. Toss once while cooking
8. Ladle sauce on the bottom of the plate. Place the bread pieces on the plate. Put one clam on each piece of bread. Ladle more sauce over the top and sprinkle with parmesan
Serve with the Riesling that you cooked with.
