Baked Chicken Parmesan and Crispy Parmesan Twists


Chicken Parmesan Ingredients:
2 boneless skinless chicken breasts
36 oz of plain, canned tomato sauce
1 cup panko bread crumbs
1 egg
1/4 cup milk
8 oz shredded mozzarella
2 cups olive oil
Seasonings to taste: Italian blend, pepper, garlic, paprika, salt, red pepper, and 1 Tbsp sugar
Fresh parsley and basil, chopped
1/2 pound fettuccine pasta

Directions:
1. Cook pasta according to directions. Toss in 2 tbsp olive oil in a 9/13 pan once out of the water
2. Cut chicken breasts in half lengthwise so you have 4 thin cut breasts. Season with a little olive oil, Italian seasoning and salt and pepper
3. Mix bread crumbs with 1 tsp red pepper flakes in a large dish
4. Whisk egg and milk.
5. Dredge chicken breasts in egg and then pat in bread crumbs and make sure they stick. Let sit on a dry sheet tray until ready
6. Heat the 1 cup of the olive oil to 350 degrees.
7. Put the tomato sauce in a Saute pan. Add seasonings and 2 tbsp olive oil. Stir and taste for seasonings
8. Shallow fry the chicken for about 3-5 minutes each side. Drain on paper towel.
9. Add a few ladies of sauce on the pasta and toss. Sprinkle a handful of mozzarella over the pasta. Lay the chicken in a flat layer on top of the pasta. Put the rest of the cheese on top each chicken and top with just enough sauce.
10. Bake at 350 for about 15 minutes or until bubbly. Top with grated parmesan and red pepper if desired.

Crispy Parmesan Twists
1 square of puff pastry dough (usually 2 in a package, only use 1)
Fresh Asiago, grated
Fresh parmesan, grated
Fresh basil and parsley, chopped
Olive oil

Directions:
1. Roll out the dough just a little bit to extend the size
2. Line a cookie sheet with parchment paper
3. Cut the dough into 3/4 in strips - you should get about 9 twists
4. Brush the strips with olive oil. Sprinkle with both cheeses and then fresh herbs.
5. Take the end closest to you on the cookie sheet and fold it up. So you are folded the strips in half. Pick them up gently and twist.
6. Brush gently with olive oil and then sprinkle with herbs and cheese again.
7. Bake in the same oven as the chicken for about 15 minutes.
Serve with extra sauce for dipping, if desired
