Catfish Po' Boy

Ingredients:
5 Catfish or Swai fillets
1 large french bread loaf
5 dill pickle slices
5 peperoncini peppers
3 tbsp mayo
Iceberg lettuce
1 large tomato
1 cup of Cajun fish fry breading mix (found by the seafood section and the sauces)
1 tbsp New Orleans seasoning by Weber
2 tbsp bacon fat
1 cup canola oil (or if you aren't using bacon fat, add a little more canola oil)
Tabasco or other hot sauce
Directions:
1. Slice tomato. Chop lettuce. De-stem your peppers and julienne them. Julienne the pickle spears. Arrange everything on small plates so you are ready to build your sandwich.
2. Mix the cajun fry mix with the New Orleans seasoning. 
3. Heat your large pan with the oil and bacon fat (if using).  You are looking for oil about 350 degrees.  If you don't have a thermometer (I don't) heat it over medium high for about 6-8 minutes or until you throw a small piece in the oil and it begins to bubble. 
4. Dry your fish fillets and cut them in half to make manageable pieces.  If they are too long, when you try to flip them in the oil, they will tear apart and break. Coat the fish in the fry mixture and lay on a dry towel until ready to fry.
5. When your oil is ready, fry for 3 minutes each side and drain on a paper towel for 2 minutes before assembling sandwich. 
6. Slice your loaf lengthwise and then in half.  Then you want to pull out some of the top of the bread, making sort of a canal down the middle.  This will help keep the ratio of bread to ingredients in the middle of your sandwich - perfect! 
7. Assemble your sandwich by placing the mayo on the bottom of the bread. Then the lettuce, tomato, pickle and pepper. Top with the fish, drizzle with hot sauce and close the bun.  You could add a little mayo on the top of the bun or maybe even a spicy mustard.
