Beer Cheese Buffalo Chicken Soup

Ingredients:
1 onion, diced
5 cloves of garlic, diced
4 cups chicken broth
2 1/3 cups of milk
1/3 cup of flour
1 light beer
1 lb boneless skinless chicken thighs
2 tbsp canola oil
1/2 bottle of Trader Joe's chili pepper sauce
2 oz Trader Joe's oakwood cold smoked English cheddar cheese - shredded
8 oz of Trader Joe's Wisconsin sharp white cheddar cheese, aged 6 months - shredded
6 oz crumbled gorgonzola cheese
Kickin' chicken seasoning
Seasoning blend: smoked paprika, garlic, chili and chives
1 tsp red pepper flakes
Salt and pepper
Garnish: semolina croutons, green onion, blue cheese crumbles, bacon bits and a few more dashes of hot sauce

Directions:
1. Season your chicken generously with seasoning blend and Kickin chicken.
2. Heat your dutch oven with canola oil to medium high. Add your chicjen thighs and cook about 6 minutes each side. Don't worry of they are cooked all the through, you will finish them in the soup later
3. Take your chicken out and just break apart a little bit. Throw about 5-6 dashes of hot sauce on your chicken and cover with foil.
4. To your dutch oven, add the chopped onion and a little salt and pepper. Stir and sweat for about 7 minutes.
5. Add your garlic and red pepper flakes. Cook for another 3 minutes.
6. Add your beer, stir. Let summer for 1t minutes or until beer is nicely reduced.
7. Add your chicken broth and stir.
8. With your immersion blender (or transfer to a blender) blend until smooth.
9. Simmer for another 15 minutes.
10. Tuen the heat to low. Whisk in about 1/3 cup milk in with your flour to create a paste. Constantly whisking, add that paste to your soup slowly. Then add the rest of your milk whisking constantly. Simmer for 10 minutes.
11. Add a handful of cheese at a time, whisking gently to melt each addition before adding another.
12. Shred the chicken and add the chicken to the soup. Gently mix in. You do want some bigger pieces to give the soup a nice texture. You don't want the chicken too small.
13. Warm through for 10 minutes or so.
14. Serve, topped with croutons, bacon, green onions, gorgonzola crumbles and hot sauce on top.

Croutons: half a loaf of semolina bread seasoning with pepper, season salt and canola oil. Put in a 350 degree oven for 10-15 minutes.

Gotta have this one with a cold brew.
