Spicy Orange Chicken Wings


I will start by saying, this may be one of my best chicken wing recipes.

Chicken wing ingredients:
20 chicken wing sections
3 TBSP orange marmalade
4 TBSP chili garlic paste (or samba oelek)
2 TBSP soy sesame glaze or stir fry sauce
1 TBSP Worcestershire sauce
1 TBSP soy sauce
Seasonings: season salt, pepper, white pepper, ginger, chili powder
Chopped green onion for garnish

Directions:

1. Season chicken generously with season salt and pepper. Dust with ginger, white pepper, chili powder. Let marinate for 1-4 hours. 
2. Preheat oven to 400 degrees.
3. Make sure to put your vent van on and open a window or 2. Cover your pan with foil and spray with cooking spray.
4. Cook your chicken at 400 degrees for about 30 minutes.
5. Take your chicken out of the oven and pull the heat down to 300 degrees in your oven. Transfer the chicken to a fresh pan covered in foil. Return to the 300 degree oven for 15 minutes.
6. Mix your sauce ingredients.
7. Put your wings in large saute pan with a lid. Turn heat on low and put sauce all over top. Toss and cover to cook about 10 minutes, tossing often. Wings are done when the sauce is caramelized. 

Serve chicken wings over the rice, with bok choy or other vegetable. 

If you're grilling these....
Put on 400 degree grill over indirect heat in a foil pan. Add a smoker box to the hot side of the grill. Cook for 30 minutes. Mix the sauce during this time.
Take the wings out of the pan (but you can keep the pan on the cool side of the grill because you'll need it for the sauce later) and put over direct heat for about 15 minutes, tossing often to avoid flare ups and burning. 
Pour sauce in the pan, put the wings back in the pan and toss. Lower the heat to medium low and put the pan directly over the heat.  Let the wings caramelize in the sauce for 5-10 minutes. Serve immediately with a garnish of green onion.
