Cod and Potato Brandade
Ingredients:
2 cod fillets
1/2 pound of yukon gold potatoes
1 bunch of thyme, dived small
2 cloves of garlic, minced
4 TBSP butter
1/2 cup panko bread crumbs
salt and peper
olive oil
1. Pierce your potatoes with a fork and boil them for about 12-14 minutes.
2. Drain potatoes and stir in 2 TBSP butter while you mash them.
3. Dry cod with paper towels. Season the cod with salt and pepper. Sear for about 2-3 minutes per side.
4. Use a square baking dish and fill the bottom with potatoes. Add the fish and flake with a fork as you gently mix it in with the potatoes. Add you garlic, thyme and another 2 TBSP butter.
5. Sprinkle the top with bread crumbs and bake for 10 minutes or until browned.
6. Once out of the oven, drizzle with a little olive oil and serve right away.
