Steak Tacos with Mole Verde


This is not an original recipe but it is from Blue Apron. I thought it was worth sharing.
Ingredients:
1 NY or Strip Steak
6 corn tortillas
4 ounces of tomatillos
2 radishes
1 avocado
1 lime
1 bunch of cilantro
olive oil
salt and pepper
Taco or fajita seasoning
2 TBSP pepitas

Directions:
1. Slice your radishes thin. Chop your cilantro. Quarter your lime. Dice your tomatillos. Slice your avocado and squeeze one wedge of lime over it and cover with plastic wrap.
2. Toast your pepitas in a cast iron skillet with 1 tsp of olive oil for 2-3 minutes. Remove to a paper towel for a few minutes. Sprinkle with salt and chop.
3. Pat the steak dry. Season with steak with salt and pepper and about 1 tsp of seasoning blend on each side. Sear in the same pan as you cooked the pepitas for about 4 min per side.
4. Take the steak out, squeeze one wedge of lime on the steak and a dash of hot sauce and tent with foil to rest.
5. To the same pan again, add your diced tomatillos and about 1 tsp of seasoning blend. Saute for about 3 minutes. Add 1/4 cup of water. Stir and reduce until thickened.
6. Transfer the tomatillo mixture to a bowl, mash them up a little more and add the pepitas, cilantro and remaining lime wedges (the juice)
7. Warm the tortillas either in the pan or in the microwave so they are pliable.
8. Slice the steak thin
9. Assemble your tacos by piling on the steak, radish, avocado, salsa. Enjoy.
