Cheesy Brie Cauliflower
Ingredients:
24 Oz of frozen cauliflower
1 1/2 cups cream
4 Oz of lite brie cheese, rind removed
1 Oz of white cheddar
3 cloves of garlic
2 ounces of butter
2 sprigs of thyme
Salt and pepper
1 cup of flour
Directions:
1. Preheat oven to 375 degrees
2. Grease a square baking dish with butter or olive oil.
3. Simmer the milk with thyme, smashed garlic, and salt and pepper for 10 minutes.
4. Strain the milk. Reserve.
5. Add the butter and flour together in a medium pot and whisk. Carefully whisk in the milk, cheese and then nutmeg. .
6. Lay out the cauliflower in the dish and season generously with salt and pepper.
7. Pour the cheese mixture over the top and gently toss to combine.
8. Cut the cheddar in small cubes and place all around.
9. Sprinkle with pepper and bake for 20-25 minutes or until thickened and bubbly.
I served this with a nice buttery ribeye cooked in a cast iron skillet.
