Hoisin and Shiitake Burgers - Just try it
Thanks Blue Apron for this one. But, I had to add the cheese.
Ingredients:
1.2 pounds of ground beef
9 potato rolls or slider buns
2 scallions
2 medium sweet potatoes
3 garlic cloves, minced
4 tbsp mayonnaise
2 tsp white miso paste
2 tbsp hoisin sauce
1/4 cup dried Shiitake mushrooms or 3-4 regular shiitake mushrooms
4 slices of white cheddar cheese
1.5 cups of bok choy
Directions:
1. Put the mushrooms in a small pot with water and heat for about
15 minutes on low.
2. Preheat oven to 400 degrees.
3. Slice your sweet potatoes into wedges and toss with season
salt, pepper and olive oil generously.
4. Lay potatoes in a single layer on a sheet tray and bake for 30
minutes, tossing once in the middle.
5. Mix your mayonnaise and miso paste with a little season salt
and pepper.
6. Rinse the bok choy and cut off the very bottom of the stem,
keeping some of it.
7. Chop the bok choy and add to a bowl with olive oil, salt,
pepper, and red pepper flakes.
8. Drain the mushrooms and chop small.
9. Combine your meat, hoisin, garlic, mushrooms, and salt and
pepper. Combine gently with your hands and loosely form 8-10 slider
patties.
10. Heat a flat top griddle pan to medium. Brush with olive oil or
spray with cooking spray.
11. Cook the burgers for 4 minutes on each side. Remove to a plate
and keep warm by the oven.
12. Lower the heat on your pan and brush with a little more olive
oil. Put your bun tops on the griddle pan for 2-4 minutes until warm and slightly
toasty. While that's happening, spread the mayonnaise mixture on the bun
bottoms and lay out on a plate.
13. Add the bok choy mixture on top of the mayonnaise mixture.
Place a burger on top, then a small square of cheese and put the top on the
bun.
14. Serve sliders with sweet potato fries, garnish with green
onions.
Love, love, love this recipe. It sounds weird but it is so yummy.

The first time I made this recipe, I used dried mushrooms and it
was really good. The second time I made this recipe, the dried mushrooms were
$11 per package, so I opted to get fresh mushrooms for $3. I used 4
mushrooms and chopped them small. When you cook the burgers, make sure your
heat is high enough and don't push them around, they will fall apart. But, the
fresh mushrooms have moisture in them, so it actually made the burgers very
moist and juicy. Love them both!
