Potato "biscuits"
Ingredients:
1 (1.5lb) bag of fingerling potatoes
2 eggs
2 tbsp chopped red onion
1/4 lb bacon
3 tbsp butter
1 tbsp milk
3 tbsp chives
4 tbsp breadcrumbs
2 tbsp olive oil
Salt and pepper
Directions:
1. Saute red onion until soft in 1 tbsp olive oil with salt and pepper. Reserve.
2. Boil potatoes in salted water until tender. About 12 minutes. Preheat oven to 400 degrees.
3. Cut chives and fry bacon. Crumble bacon and reserve.
4. Drain the potatoes and let cool for 5 minutes or so.
5. Mash the potatoes with the butter. Don't mash too much. A few clumps is good.
6. Add in all other ingredients. Switch to a spatula and mix.
7. Season heavily with salt and pepper.
8. Spray a muffin tin with cooking spray. Scoop potato mixture into muffin tin. It should fill about 9 muffin spaces. Don't pack them down too tight.
9. Bake in the oven for 18-20 minutes or until a little brown color appears on top.
To make this a bit healthier you can use 1 pound of potatoes and 1 cup of riced cauliflower. I have done this and it tastes really good. Just make sure you season it well.
