Tropical Chicken Tacos and grilled pineapple salsa
Salsa ingredients:
1 pineapple
3/4 red onion
1/2 cup cilantro
1 red pepper
2 jalapeño peppers
2 tbsp orange marmalade
5 dashes of Tabasco
3 cloves of garlic
Zest and juice of 1 lime
1 tsp red pepper
1 tbsp hot and sweet jam
Salt and pepper to taste
Chicken ingredients:
2 large chicken breasts, cut into slices (You can also use the package chicken tenderloin pieces)
Zest and juice of 1 lime
2 TBSP adobe sauce
Salt, pepper, taco seasoning
Directions:
1. Combine ingredients for chicken marinade EXCEPT for the lime juice. Marinate chicken for at least 2 hours and up to 6. When you're ready to start making the salsa, add the lime juice to the chicken, toss and continue to marinate while you prep the salsa. You shouldn't leave the chicken in the lime for more than 2 hours.
2. Slice the salsa ingredients into big pieces and grill until grill marks are seen. Chop up and combine together with the other salsa ingredients. Taste for seasoning, reserve.
3. Grill the chicken about 4-5 minutes per side. Remove.
4. Serve in a tortilla or crispy tacos shell topped with tropical salsa.
