Shaved beef sliders with "horseradish" cream sauce and savory goodness top


Beef ingredients:
1 pound of shaved beef (can buy it in most meat sections now, raw shaved beef)
2 cups beef stock
1/4 cup chopped hot cherry peppers
1 tsp Hungarian paprika
1 tsp steak seasoning
1 tsp Cumin
1 tsp Salt
1 tsp Pepper
1 tbsp canola oil
5 dashes worsteshire

Directions:
1. Season steak with 1/2 of all the seasonings. Heat 1 tbsp canola oil in a medium saute pan.
2. Throw beef in pan and move around to break up pieces. Cook just until brown.
3. Add beef stock, remainder of seasoning, peppers and worsteshire.
4. Reduce heat to low and let simmer for at least 10 minutes but up to 40.
Taste for seasonings

Ingredients for "horseradish cream sauce"
2 tbsp low fat ricotta cheese
1/2 cup sour cream
2 tbsp horseradish paste
2 tbsp dijon mustard
1 tsp vinegar
Pepper
Mix and reserve

Ingredients for savory green goodness:
1 Vidalia onion
10 oz frozen spinach, thawed anD squeezed dry
2 cups chopped mushrooms
3 cloves of garlic, minced
1 tbsp balsamic vinegar
4 tbsp olive oil
6 oz of amber beer
Salt and pepper
Pepperoni night peppers for garnish
Shredded mozzarella cheese for topping

Directions:
1. Heat 1 tbsp olive oil over medium heat. Slice onion thin.
2. Saute onion in oil for about 10 minutes, turning often.
3. Lower heat and add a little salt and pepper. Saute another 10 minutes.
4. Add your beer and reduce
5. Add garlic and saute for 2 minutes.
6. Add additional oil, mushrooms and spinach. Stir and saute over medium low heat for about 8 minutes.
7. Add balsamic and a little more seasoning. Taste

Slider buns needed.... or some hoagie rolls to make a Chicago style beef sandwich.
 To assemble, put the sauce on the bottom of the bun. Add pepperonicini peppers, then meat, spinach mixture, cheese and dip top bun in beef juice.

Serve with homemade chips for crunch!
