Pesto Shrimp Skillet
Ingredients for pesto:
about 15 large basil leaves
about 2 big handfuls of parsley
3 cloves of garlic
1 lemon, zest and juice
salt, pepper, red pepper to taste
olive oil for streaming - about 1/4 cup
Ingredients for marinade - do not marinade for more than 2 hours, but at least 30 minutes:
2 garlic cloves
1 jalepeno
1/2 of a lime
salt
pepper
1/2 tsp red pepper
3 TBSP olive oil
2 pounds of shrimp
2 TBSP olive oil for pan
Directions:
1. You can combine pesto up to a week in advance in a food processor and store in air tight container in the fridge.
2. Marinade Shrimp
3. Preheat grill to medium high with olive oil. Drain shrimp from marinade and grill for about 4 minutes, turning once.
4. After 4 minutes, brush on all of the pesto you made and let it cook for 2 more minutes. Serve right away.
