Sweet Mediterranean Flatbread with Burrata
Ingredients:
2 Mama Mia's flatbread pizza dough disc (already par baked)
12 slices of salami (something with a little sweetness)
1/2 cup of sweetened cranberries
10 slices of fresh, part skim mozzarella (harder brick of mozzarella. I used on from TJ's)
10 basil leaves
1/2 cup olive oil
2 cloves of garlic
1/2 cup pizza sauce
1 roma tomato, chopped
fresh parsley for garnish
1 ball of burrata cheese
Pinch of red pepper
Directions:
1. Smash garlic cloves and add them to olive oil in a bowl for at least 30 minutes or while you prep your other ingredients
2. Slice the cheese, chop the tomato, slice the salami and chop your parsley.
3. Preheat your oven to 425
4. Place the flatbread on a pizza stone (if you have it, otherwise use a cookie sheet), and brush the flatbread with garlic olive oil.
5. Put in the oven for 5 minutes to begin to crisp the pizza
6. Take the pizza out and continue to top it. You don't need much sauce, so just lightly spread it on. Slice the burrata ball in half and place it in the middle of the pizza. Evenly distribute the salami, basil, mozzarella and cranberries all around. Top with parsley, fresh tomato and a pinch of red pepper.
7. Bake for 10 minutes or until cheese is bubbly. The flatbread should be slightly crisp and delicious. Slice and serve.
