Salted Caramel Cookie Bars
This is an easy recipe that you can use with any of your favorite cookie recipes.
My favorite recipe is:
2.5 cups of flour
3/4 cup brown sugar
3/4 cup sugar
2 eggs
2 tsp vanilla
1 tsp baking sofa
1/2 tsp salt
2 sticks of butter
1 (4 oz) bar of Hershey's, chopped
Salted caramel filling
12 oz of caramel candies, usually wrapped individually
3 tbsp buttermilk (or you can use heavy cream)
1 tsp sea salt
Directions:
1. Mix cookie dough and chocolate and let sit in refrigerator for 30 minutes
2. Grease a 9 inch square pan and then cover with parchment
3. Preheat oven to 325
4. Take half the cookie dough and press gently into the bottom of the pan. Mix caramels, half the salt and then the buttermilk. Microwave for 20 second increments
5. Stir the caramel and be mindful it is hot candy. It should be a sticky smooth and just running a bit.
6. Pour almost all of the caramel over first layer of cookie dough. Sprinkle with salt.
7. Add the remaining cookie dough on top
8 press down gently and bake for 45 minutes
9. When the cookie bars come out of the oven, let rest for 10 minutes. Then drizzle remaining caramel (you may have to reheat it) and sprinkle with salt. Let rest and cool for another 20 minutes, at least.
10. Pull parchment paper and set on counter. Cut into bars and serve.
