Mexican Turkey Burgers
Ingredients:
Chipotle Mayo
1 cup mayo
2 TBSP red wine vinegar
1 TBSP adobo sauce from the chipotle in adobo in a can
Burger:
1.5 lbs ground turkey
1 TBSP worteshire
2 tsp green chiles
2 TBSP black bean dip (spicy black bean dup from Trader Joes)
salt, pepper, garlic powder
sprinkle of panko once you form the balls
Toppings:
Roasted plantain chips (also from trader joes) or use original Fritos - you have to have a crunch element
Spicy Gaucamole (trader joes)
sliced yellow and orange peppers
diced jalepeno
colby jack cheese
and your homemade chipotle mayo
12 brioche slider buns
Directions:
1. Gently mix all burger ingredients together and form 12 equal size balls of meat. Place on a greased cookie sheet. Sprinkle with panko bread crumbs and refrigerate until ready to cook. I let mine sit in the refrigerator for 4 hours.
2. Prep all of your toppings and mix your mayo.
3. Heat the oven to 170 degrees. Spray your buns with cooking spray and warm up for a few minutes in the oven.
4. Heat a large griddle pan over medium high heat and brush with canola oil.
5. Place one meatball on the griddle at a time. Spray your spatula with cooking spray and flatten down the meat into a patty while it is on the griddle. This will help get a nice brown crust on your burger.
6. Continue adding all the burgers and smashing them down. You need to cook turkey all the way through. So, it takes about 4 minutes each side.
7. Once you flip them and press them down, wait a minute or 2 and then add the cheese. I used about 6 slices of cheese total here. You want to tent your griddle a little bit to create a down to melt the cheese.
8. Create your masterpiece. Guacamole, yellow and orange peppers, burger, jalapenos, roasted plantain chips or fritos, mayo on top bun!
